Chocolate Pineapple Creams

250g plain fondant or plastic icing
250g milk chocolate
Pineapple flavouring oil
Yellow food colouring
Yellow and white icing daisies
Round cookie cutters
Dipping spoon

Colour your fondant pale yellow with the food colouring. (Add only a tiny bit of colouring or your fondant will go a bright yellow, and you don't want that). Then add two or three drops of the pineapple flavouring oil to the fondant, mix it through and then taste to see if more flavouring is required. Roll the yellow pineapple fondant out (cover the table top surface with a little icing sugar to prevent your fondant from sticking to the table) quite thin and then with your cookie cutter cut out small round shapes. Place these fondant rounds on a tray, ready to be dipped. Gently melt your chocolate and then dip (using your dipping spoon) each fondant cream into the melted chocolate. Once dipped place the chocolate pineapple fondants on grease proof paper and leave to set. When the chocolate is no longer shining you know it has set. You can stick an icing daisy on the top of each pineapple cream for effect. These Pineapple fondant creams make wonderful gifts. Just present them beautifully in a box or on an attractive platter and everyone will love them.
