Chocolate Mint Surprise

200g dark chocolate - melted
1 chocolate mould of 4 x 4 thin flat squares
1 cup thick cream
2 tablespoons icing sugar
Peppermint flavouring or Crème de Menthe
Green colouring
Fresh mint leaves for garnishing

Gently melt the dark chocolate in a double boiler or in the microwave. Fill the square mould with chocolate, tap to release air bubbles and then place in the freezer to set. Beat the cream with the icing sugar, flavouring and a tiny bit of colouring (the cream should be a very pale green) till stiff. When the flat squares are set take five squares to assemble one box - one for the bottom and four for the sides. Stick them together with melted chocolate. Pipe or spoon the mint cream into the chocolate boxes and garnish with fresh mint leaves. These chocolate mint surprises are wonderful as an after dinner mint.
