Mint Chocolate Christmas Tree

1 Christmas tree mould in sections
200g white chocolate
100g mint chips
Peppermint flavouring oil
Small cellophane bags for packaging
Christmas ribbon Christmas stickers

Melt your white chocolate very, very gently either in a double boiler or in the microwave. Remember that white chocolate is much more sensitive to heat than milk chocolate and so it burns more easily. The hotter it gets the thicker it gets, so if you see it getting thick remove it from the heat immediately and stir it rapidly to cool it down. Now add four drops of peppermint flavouring oil and the mint chips and stir through well. Spoon the chocolate into all the sections of the tree in the mould. Tap the mould to release the air bubbles and for the chocolate to run smooth. Place the mould in the freezer for about five to ten minutes to set. When the chocolates are set stick each consecutive part of the tree onto the next with a bit of melted chocolate. Start with the smallest (or top part of the tree) and work your way down till you have a full Christmas tree. Place the mint chocolate Christmas tree in cellophane bags and tie it up with Christmas ribbon. Put a Christmas sticker on the packet to finish off the presentation.
